BBQ Smoke Off

• 20′ x 20′ Booth Spaces – Booth Spaces are limited and will be filled on a first come – first served basis

• $75 Entry Fee

• Smokers only: Wood, Charcoal, Propane or Electric, no gas grills

• 2 Meat Categories: (Meat will be provided.)

  • 3 Racks Ribs (Spare or Baby Back)

  • 2 Pack Pork Butt approx 10# each. Turned in as pulled pork

  • 12 Pork Wings & Chicken Wings (If participating in the People’s Choice contest)

  • Check in times are from 7am to 9am, unless prior arrangements are made if arriving after 9am. COOKS MEETING AT 9 AM.

  • Turn in Times: Butt 4pm, Ribs 3pm

  • Turn in boxes will be provided; double blind system will be used in all categories.

  • Absolutely NO garnish

  • All boxes will have 6 individual pieces of meat

  • No pooling of sauce; sauces if used must be glazed onto the meat.

  • 100% Payouts for 1st, 2nd and 3rd in each category and Grand and Reserve Grand

• People’s Choice Wing contest – open to Teams and Individual participants
  • $25 to participate
  • Chicken & Pork Wings will be provided
  • People’s Choice Awards based on community voting
• Backyard BBQ Association of Siouxland Rib Rally event

• AWARDS AT 5PM

• NO SELLING OF PRODUCTS – Extra meat will be turned into community feed

• Safety and Cleanliness

  • Shirts and shoes must be worn at all times

  • Cleanliness is required for all cooks, assistants, cook site, and cooking devices

  • Prep and cooking areas should be clean and sanitized

  • No tobacco use around any prep, cooking and turn in areas

  • Meats need to be below 40͒ before cooking and above 140͒  after cooking.
